Redfish is found in the cold waters of Canada, Greenland, and Iceland up to the Barents Sea. The fish is also caught in the northern part of the North Sea. It lives at a depth of 1000 meters. The redfish can be recognized by its bright orange skin and can reach a length of one meter with a weight of 15 kilos. When you buy a whole fish, the eyes may bulge. This is due to the large pressure difference between the depth of the sea and the surface water. The fish is related to the scorpionfish. The flesh is white-pink and firm, has a mild flavor, and is low in fat. This makes redfish suitable for various methods of preparation. From May to September, this fish is of top quality.
