The crayfish family is very large and consists of 400 species that are distributed worldwide. In Europe, we find several species of red crayfish that originally come from the North American inland waters (Louisiana). The red crayfish is of the best quality in the summer months and, unlike other lobsters, lives in fresh water. Due to its meaty texture and fresh, sweet taste, it is a popular ingredient among many guests (even non-fish lovers).
