The pink shrimp extra A are of the Black Pink variety and come from breeding ponds in river deltas in Kalimantan (Indonesia). Pink shrimp are also known as deepwater or deep-sea shrimp. The wild Black Pink larvae enter the breeding ponds when fresh water is let in. The larvae are raised under the same conditions as the Black Tiger shrimp. Harvesting coincides with the tides.
At the water outlet of the breeding ponds, a net is stretched, in which the shrimp remain when the ponds are drained. The shrimp are transported under ice and in poly boxes in small volumes to the processing location. There, the Black Tigers and Black Pink shrimp are separated. The Black Pink shrimp are beheaded and deveined. Then they are sorted by size and cooked. After cooking, the shrimp are peeled. In this way, the characteristic pattern on the shrimp is created.
