Razor clams, or jackknife clams as they are also called, have a long tubular narrow shell and live in the sandy bottom of the North Sea where they can burrow up to a meter deep. Cook like a mussel (about 3 minutes) or briefly stir-fry and the razor clam is ready for consumption. Besides the delicious taste, the elongated shell also presents beautifully.
