Codium is a sturdy green algae species with tubular and spongy branches. This sea vegetable is also known by the name velvet weed, which refers to the down of small hairs that cover the plant. Codium has a full flavor and can be excellently combined with oysters, among other things, and is well-suited for making emulsions, ice preparations, and oil.
