Pietra has the typically weathered appearance of a mountain cheese from the Alps. The sticky rind is light orange-brown in color with a whitish-gray mold haze. The dairy is relatively firm, especially in the core, almost crumbly. In that, the cheese resembles more of a matured farmhouse cheese, savory with a hint of sourness in the taste.
