Capriolen is a fresh goat cheese. Deliciously creamy in taste and yet easily digestible. The cheese is made from whole pasteurized goat milk and is available in various flavors. Capriolen do very well as a variant on a cheese platter, but are also excellent for use in hot or cold dishes.
The cheeses from goat farm De Kruidenwei are largely made by hand from fresh goat milk. Except for the Capriolen and the goat quark, all cheeses are made from raw milk (maximum 30°C). In the preparation of cheese, only starter culture, rennet, and sea salt are used. The starter culture ensures a good conversion of milk sugar into lactic acid. This makes the cheese more durable and digestible. The cheeses are curdled with organic goat rennet. The Celtic sea salt is unrefined and rich in minerals.
