A mild cheese with the round aftertaste of milk cream. The cheese is aged for three months in a jacket of spruce bark. This and the unique ripening cultures used give the cheese a unique flavor. Sangles is made from cow's milk. The milk is thermized for preparation. Thermization is a mild pasteurization that categorically falls under raw milk.
