Lady Blue is a blue cheese made from raw goat's milk. The cheese is named after the 'leading lady' of the herd. She was a very characteristic goat, with a coat in the colors of a blue cheese. Reason enough to name this special cheese after her. Lady Blue fits excellently on a cheese platter. The cheese is somewhat spicy and creamy in taste, yet easily digestible. Pairs well with a slightly sweet white dessert wine.
The cheeses from goat farm De Kruidenwei are largely handmade from fresh goat's milk. Except for the Capriolen and the goat curd, all cheeses are made from raw milk (maximum 30°C). In the preparation of cheese, only starter culture, rennet, and sea salt are used. The starter culture ensures a good conversion of milk sugar into lactic acid. This makes the cheese more durable and digestible. The cheeses are curdled with organic goat rennet. The Celtic sea salt is unrefined and rich in minerals.
