Pont l'évêque originates from the area of the namesake Norman village, where a large regional cheese market used to take place. The cheese has been on the French cheese map since the 12th century and has been protected by the AOP label since 1976. This refined version from our in-house affineur Hennart is made from raw cow's milk and matures for at least 45 days. This results in a deliciously spicy red rind. The characteristic square cheese is washed with brine, which eventually gives it an orange-yellow color. Pont l'évêque is known for its 'rustic' smell, but the taste is much milder. A delightful addition to your cheese platter.
