The extra advocaat from F.X. de Beukelaer is made using fresh egg yolks (no frozen egg yolks or egg powder). The extensive recipe for this advocaat includes, among other things, 21 egg yolks per liter of pure alcohol. Furthermore, no thickeners or colorants are added. The color comes solely from the egg yolks. Because the advocaat is made with fresh eggs, the alcohol content is brought to 18%, which is a natural preservative.
