This herbal bitter owes its name to the herb Absinthe Wormwood (Wormwood). It is this herb that gives our regional drink its somewhat bitter taste. The bitter herb with many medicinal properties also has a slightly hallucinogenic and intoxicating effect, but the light dose used is not noticeable. Originally, Els was produced and consumed in Dutch and Belgian South Limburg and the north-west of the German Eiffel, the current Euregio Meuse-Rhine. The South Limburg Els was originally developed by the brothers Eduard and Louis Stijns, two pharmacists from Beek in the 19th century, who gave the drink name a double meaning with the first letters of their first and last names: ELS. In a time when medicines were not yet available, the brothers developed a healing bitter in which a number of medicinal herbs were processed. Meanwhile, the originally Beek Els la Vera has not been a regional product for years, but a drink produced by Bols in Amsterdam. Our Els from Ingendael, made in Valkenburg, is a less bitter variant and contains the following ingredients: licorice, wormwood, lemon peel, lavender, and caraway seed. The Els is soft in taste and all ingredients come through nicely, with the lavender and lemon peel providing a subtle freshness. During the production process, the herbs macerate for five weeks, so that all flavors come through nicely. The end result, to which a fraction of sugar is added, then stands for another two weeks, resulting in a beautifully balanced drink. The Els has an alcohol content of 25.5%. The Els is the ingredient of a Limburg coffee. Also delicious as a digestif after a meal.
