The herbal bitter is the first drink that the founders of Ingendael developed in 1997 and perhaps the most well-known drink in the Ingendael assortment. Named after the nature reserve between Houthem-St. Gerlach and Valkenburg, the herbal bitter is made from eight herbs: wormwood, caraway seed, lemon peel, lavender, licorice, bay leaf, star anise, and cinnamon. We let this mixture macerate for a month in an alcohol-water mixture. The result is a smooth herbal bitter with the taste of anise, licorice, and caramel. The alcohol content is 20%. The herbal bitter is delicious in or with coffee, but also in game dishes, sauces, or dry sausage. But the herbal bitter also comes into its own wonderfully in a chocolate truffle.
