This Old Genever is aged for 1 year in barrels and combines the specific qualities of three different grains. The grain eau de vie (malt wine) is distilled from equal parts Rye, Corn, and Malted Barley. The malted barley provides the backbone of the drink, while the corn adds a rich sweetness and the rye characterizes the spicy notes. The new distillate undergoes three distillations in a small pot still. Then the distillate is partially distilled a fourth time with carefully selected herbs such as juniper, licorice root, and aniseed. As the final step, the malt wine is mixed with the other ingredients and the alcohol percentage is reduced to 45% for aging in small wooden barrels.
