This wine is produced from vineyards located around the medieval city of Carcassonne. The rolling vineyards are mainly planted on clay/limestone soils. The climate is Mediterranean with some influence from the Atlantic Ocean. In this warm climate, it is of utmost importance to harvest the grapes at the right moment to achieve optimal ripeness with a good fruit and tannin balance, with an acidity that ensures a fresh, inviting wine. We pick our Syrah early at 12.5% from young vineyards that have fewer roots and thus less access to water. By picking the grapes early, we revive the suffering vines and create a delicious fresh grape with plenty of fruit and freshness for our rosé. We press the grapes directly when they enter the cellar before fermenting them at low temperature (14°C). Light pink color, lots of raspberries and strawberries, and a juicy and fresh finish. Serving suggestions: Enjoy chilled by the pool with some tapas, a fresh summer salad, or some BBQ meat.
