Not overly structured, oak-powered but fresh, fruit-oriented, and subtle: The elegance of Languedoc! We found our Viognier near Sète in the vineyards just before the Mediterranean coast. This has a huge influence on the way they grow, as the warm Mediterranean climate and the inland sea breeze ensure that the grapes are optimally ripe. A short maceration with skin contact enhances the aromatic complexity and is followed by a gentle pressing in a pneumatic press, extracting only the clearest juices. We control the fermentation temperature at 17°C to preserve the fresh fruit aromas and elegance. Aged in stainless steel (no oak). Gold in color with an expressive nose with lots of citrus, apricot, and lychee. Rich and round structure in the mouth, fruit, a bit of grapefruit peel, and a fresh finish. Serving suggestions: An excellent wine with grilled fish dishes or in sauce. Ideal for Sushi and Sashimi due to its full and round structure and can handle a bit of wasabi!
