This Merlot is produced around the medieval city of Carcassonne. The rolling vineyards are mainly planted on clay and limestone soils. The climate is Mediterranean, with some influence from the Atlantic Ocean.
When the grapes arrive at the winery, they are destemmed and undergo a cold maceration for 3 to 4 days at a low temperature to extract the maximum aromas, typical of Merlot. The wine then ferments in stainless steel tanks at a controlled temperature. After fermentation, the Merlot matures in French oak.
A beautiful bright red color and a nose with aromas of black cherries and strawberries. On the palate, the Merlot is well balanced with good body, soft tannins, plenty of fruit, and some vanilla notes from the oak aging.
