"Les Rôties" is a Sauvignon Blanc plot planted in 1985 in Thauvenay, bordering the flint zone and situated precisely at the transition between limestone and flint soils. On the other side of the road lies the Les Rôties Pinot Noir plot. This area is particularly rich and interesting due to its location on a transitional terroir. The grapes have a southeast exposure and develop a beautiful golden-brown color in the sun.
Nose: notes of lime, ripe pear, acacia blossom, and chalk. Palate: intensely mineral, bone-dry, and elegant, with a fine balance between tension and ripeness. Finish: long, fresh, with a subtle salinity. A wine with depth and aging potential, very suitable for gastronomic use. Perfect with oysters, ceviche, or refined vegetable dishes. Serve at 10-12°C.
