Le Pavillon 2015 is a legendary red wine made from 100% Syrah, sourced from the ‘Les Bessards’ area on the Hermitage hill, with a rugged soil of partially weathered Tournon granite, enriched with black mica and quartz. The grapes were hand-harvested at optimal ripeness, destemmed, and vinified in small concrete vats with indigenous yeasts and moderate use of sulfur. Maceration lasted 3 to 4 weeks, followed by 18 to 20 months of aging in wooden barrels (an average of 15% new). The wine displays a garnet-red color. The nose offers ripe notes of eucalyptus, menthol, graphite, and dark fruit. On the palate, it is velvety with flavors of dark fruit, sandalwood, and fresh, noble vegetal nuances. The finish is long and complex. 2015 was an outstanding and exceptional vintage, marked by heatwaves that were well managed through experienced vineyard practices. The early harvest at the end of August produced grapes of remarkable quality. Red wines from this year are powerful, refined, and complex, with a clear expression of terroir.
