Quiot is often mentioned in the same breath as the Southern Rhône. Quiot owns several vineyards in the important villages in the Rhône, including Vacqueyras, Gigondas, and Châteauneuf-du-Pape. However, Quiot does not only have estates in the Rhône. The family also owns the beautiful winery Domaine Houchart in Provence, intended for the production of rosé. Originating from Chateauneuf-du-Pape, Rhône Valley. The soil is diverse but mainly consists of sand, limestone, and deeper layers with clay and silt. This ensures good drainage of precipitation. The grapes are destemmed. Fermentation takes place at a controlled temperature for two to three weeks. The must is pumped over twice a day. This gives the wine more color, tannin, and flavor. The wine ages for 18 months, 15% of which is in large wooden 'foudres'. Ruby red in color with aromas of ripe, dark berries, leather, licorice, earthy and tobacco. Full wine, good structure with fleshy tannins. Long finish. Delicious with dishes with garlic and thyme; for example, lamb chops or grilled vegetables. Also wonderful with Beef Wellington.
