This 'Sparkling Wine' or 'Méthode Cape Classique' is actually the South African answer to Champagne. Made from Chardonnay and Pinot Noir. Within the making of this wine, there is the méthode Cape Classique and the superior. The difference between these two is that the 'regular' Cape Classique has been on its yeast cells for between nine and twelve months, but this one much longer. No less than 24 months. The wine is complex in aroma and in taste it is really very ripe and fresh.
