The 40 hectares of Saint Roch are located in the Maury area of the Agly Valley, 25 kilometers from Perpignan and the Mediterranean Sea. The castle of Queribus, built by the Cathars, overlooks the vineyards. Here, as much as possible, environmentally friendly practices are used. By selecting and pruning, the quantity, ripeness, and quality of the grapes are ensured. The sun and the excellent skills of winemaker Jean Marc Lafage do the rest. Chimères is made from grenache noir, syrah, and carignan. It features smooth tannins with flavor notes of ripe blackberries, licorice, and spices.
