This Vin Santo from Castello Vicchiomaggio is made from Malvasia and Trebbiano grapes. The color is amber with orange tones, the bouquet is fine and elegant, with deep notes of honey, dried fruit, and apricot. The wine is velvety on the palate. Vin Santo means 'holy wine' and is the name used for the amber-colored intense 'straw wines' from Tuscany. The grapes for this wine are dried on straw mats. This happens in the warmest and driest part of the winery, and the grapes dry very slowly. This process concentrates the natural sugars of the grapes and thus also the flavor of the wine. After drying, the grapes are carefully pressed. After the fermentation of the must, the wine is aged for at least three years in small wooden barrels. The wine is traditionally served as a welcome drink and often enjoyed in combination with Amaretti and Cantuccini cookies.
