Wine and food pairings: Very versatile, excellent with starters, from vegetable minestrone to spaghetti with clams; exceptional with fish dishes or white meat.
Vinification: To bring out the fruitiness of the wine, the grapes are macerated with the skins for a few hours before being pressed. The grapes are then gently pressed and the lees are removed by natural sedimentation. The alcoholic fermentation takes place with pure yeasts at a controlled temperature of 19°C in large wooden barrels.
