Late Harvest is one of the treasures of the legendary Tokaj region, renowned for its exceptional naturally sweet wines. This wine is made from a blend of three Hungarian grape varieties: Furmint, which provides acidity for perfect balance and contrast with the sweetness; Hárslevelű, which adds creaminess and a silky texture; and Sárga Muskotály, which completes the aromas.
To produce Late Harvest, at least half of the grape clusters must be Aszú berries, meaning at least half of the berries are affected by botrytis or noble rot. Therefore, several passes are made through the vineyard during harvest, and only clusters with at least half of the berries affected by botrytis are selected.
After destemming, the grapes are macerated for 4 to 12 hours and fermented for 15 to 25 days in stainless steel tanks. The wine then matures for two months in 220-liter Hungarian oak barrels, called szerednyei, followed by six months of bottle aging.
Tasting notes: The Late Harvest is balanced, fresh, and silky. Floral and citrus aromas combine for an elegant and complex nose, followed by a lush and persistent palate.
