Pedro Rodriguez e Hijos is a Spanish family business, established in Sanlúcar de Barrameda since 1821. This coastal town is characterized by chalky Albariza soils, a warm climate, and many hours of sunshine that are tempered by the cooling influence of the Atlantic Ocean. These factors, along with a long wine tradition, ensure excellent ripening of the Palomino grapes. The bodegas (aging cellars) of Pedro Rodriguez are perfectly designed for optimal sherry aging. Complex, saline aromas of apple among others and a full, ripe taste with a classic, sharp Manzanilla edge and a bone-dry finish. Pairs well with aged hams, asparagus, and fish. Also very surprising in combination with Asian ingredients and dishes.
