Puerto Caldera with Pineapple

Ingredients

40mlFruit purée 100% Pineapple
30mlWhite rum "Spanish" style*
10mlBrown rum "British" style**
10mlFresh lemon juice
10mlSimple sugar syrup*
10mlSherry Amontillado
20mlPort

Preparation

  1. Quickly shake the ingredients in a "rocks" glass, except for the port.
  2. Strain and pour over crushed ice.
  3. Top up with 20 ml port.

*** Make simple syrup: mix 1 part white powdered sugar and 1 part water until the sugar is completely dissolved.
