Bordalou blueberry

With the single-serving Bordalou base pastry, you can quickly create a variety of summer tarts, such as this Bordalou with blueberry.

Ingredients

2blueberry juice
50gSilvia flambé egg white
Bordalou base
Blueberries

Preparation

  1. Mix the egg white powder with the blueberry juice.
  2. Pour into a siphon and aerate with two cartridges.
  3. Let stand overnight.
  4. Place the washed blueberries on the Bordalou.
  5. Bake in an oven.
  6. Pipe the blueberry foam on top and flambé with a blowtorch.
