4oranges (juice and zests blanched twice)
4blood oranges (juice and zests blanched twice)
4cloves
2cardamom pods
500gSugar
2Star anise
15gdried orange blossom
Orange ice cream
Callebaut ice chocolate white
Preparation
- Bring all the ingredients to a boil together.
- Let the stock infuse further in the refrigerator.
- Scoop balls of the ice cream and freeze them well.
- Melt the Callebaut ice chocolate.
- Dip the ice cream balls in the chocolate and store in the freezer.
- Cut some orange segments away from the membranes.
- Marinate the orange segments in warm broth with a little Cointreau.
- Place the orange segments in a glass and add a scoop of ice cream on top.
- Serve the broth warm alongside on a tealight.
