350gBrandade of cod with crayfish
20gDutch shrimp
5gChives
30mlCulinary hollandaise sauce
10mlSushi vinegar
20gwatercress
Preparation
- Warm the brandade in a saucepan.
- Gently heat the Hollandaise in a small saucepan and froth lightly with a hand blender.
- Mix the Dutch shrimp with the chives and sushi vinegar.
- Spoon the brandade into a ring mold with the shrimp on top.
- Spoon the frothed Hollandaise over it.
- Garnish with watercress.
