Stuffed baby squid with mushrooms

Baby squid stuffed with mushrooms and prawns with their own juice.This dish was made by Guillermo, owner of restaurant El Mercat in The Hague.

Ingredients

250mlshrimp soup
6Olive oil
1Spring onion
5baby octopuses
300gShrimp
1Lemon
3Garlic cloves
parsley and chives to taste
350gMushrooms

Preparation

  1. Put three tablespoons of olive oil in a pan and add the chopped onion and two cloves of garlic.
  2. Slice the mushrooms and cook them in another pan until nicely browned and done.
  3. Finely chop the shrimp and sauté them in oil for three minutes.
  4. Add the spring onion, garlic, and lemon juice.
  5. Once cooled, fill (note: not too much) the squid with the mixture. Close them with a small skewer if necessary.
  6. Heat a pan over high heat and sear the squid on both sides until they have a nice golden color.

  1. Serve the squid on a plate, pour a little of the shrimp soup over, and garnish with parsley and chives to taste.
  2. Fry the squid tentacles with a few mushrooms as a side dish.
