Cracker red beet with eel

We finish this dish with horseradish mayonnaise!

Ingredients

rice paper
Smoked eel
Mayonnaise
beetroot powder
Crème fraîche
Horseradish

Preparation

  1. Fry rice paper until crispy in oil and then drain well on paper.
  2. Using a tea strainer, sprinkle beetroot powder over it and break into pieces.
  3. Serve the crackers as a bite or amuse-bouche with smoked eel and a sauce based on mayonnaise, horseradish, and crème fraîche.
  4. Serve the cracker immediately.
