Mango crème brûlée with passion fruit smoothie

An exotic mango crème brûlée, combined with a fresh passion fruit smoothie. A tropical dessert with a refined and fresh taste.

Ingredients

200gMango purée
800mlDebic crème brûlée

200mlPassion fruit juice
1kgFrozen mango
300mlOrange juice
30gGinger
5gLemon verbena
1units.itemspassion fruit

Preparation

  1. Heat the crème brûlée to 70°C and mix with the mango purée.
  2. Portion into the glasses and reserve in the refrigerator for 4 hours.

  1. Blend all ingredients into a nice smooth smoothie.
  2. Add extra orange juice if the smoothie is too thick.

  1. Pour the smoothie à la minute over the crème brûlée and finish with a piece of mango and a sprig of lemon verbena.
