400mlDebic parfait
1kgFrozen pineapple pieces
100mlMalibu
500mlPineapple juice

Preparation
- Whip the parfait until light in the planetary mixer and mix with the coconut milk and Malibu.
- Transfer to a piping bag with a plain nozzle and fill the glasses halfway.
- Reserve in the freezer for 4 hours.
- Blend all ingredients into a nice smooth smoothie.
- Add extra pineapple juice if the smoothie is too thick.
- Pour the smoothie à la minute over the parfait and garnish with a piece of pineapple.
