Preparation
- Heat the white wine and water with the sugar until the sugar is dissolved.
- Pour this boiling mixture over the dried dates and let it cool completely.
- Remove the skins from the dates.
- Blend this mixture smooth with the jus and 15 grams of butter.
- Optionally, press through a sieve and season with a drop of red wine vinegar.
