Date cream

A rich sweet cream, delicious with a dish featuring veal, for example.

Ingredients

220gWater
65gVeal jus
220gWhite wine
200gSugar
15gButter
400gPitted dates

Preparation

  1. Heat the white wine and water with the sugar until the sugar is dissolved.
  2. Pour this boiling mixture over the dried dates and let it cool completely.
  3. Remove the skins from the dates.
  4. Blend this mixture smooth with the jus and 15 grams of butter.
  5. Optionally, press through a sieve and season with a drop of red wine vinegar.
