A new, bold version of the classic Belgian dame blanche (vanilla ice cream and dark chocolate sauce).The base of dark chocolate provides a solid flavor foundation, while the ice cream and chocolate sauce add lightness and a fruity, tangy note.

Preparation
- Heat the milk, water, and yogurt to 
- Boil the milk, cream, and beet powder.
- Pour the mixture over the ruby RB1 and mix evenly with the mixer.
- Pour into a mixing bowl, cover, and store in the refrigerator.
- Heat to 45°C before use.
- Melt the Power 80 together with the butter.
- Whisk the egg yolks and sugar until light and add the ganache.
- Whip the egg whites and sugar into a meringue.
- Pour onto a baking tray lined with baking paper or Silpat.
- Bake for 12 minutes at 170°C.
