Dame Ruby

A new, bold version of the classic Belgian dame blanche (vanilla ice cream and dark chocolate sauce).

The base of dark chocolate provides a solid flavor foundation, while the ice cream and chocolate sauce add lightness and a fruity, tangy note.

The dessert consists of:

  • Power biscuit

Preparation

  1. Heat the milk, water, and yogurt to 

  1. Boil the milk, cream, and beet powder.
  2. Pour the mixture over the ruby RB1 and mix evenly with the mixer.
  3. Pour into a mixing bowl, cover, and store in the refrigerator.
  4. Heat to 45°C before use.

  1. Melt the Power 80 together with the butter.
  2. Whisk the egg yolks and sugar until light and add the ganache.
  3. Whip the egg whites and sugar into a meringue.
  4. Pour onto a baking tray lined with baking paper or Silpat.
  5. Bake for 12 minutes at 170°C.
