
Dressing of violets
Taste the flowers on the plate with this violet dressing.Ingredients
3Crème fraîche
75mlWhite wine vinegar
3gdried violets
250mlOlive oil
1gCinnamon powder
50gblood orange purée
Preparation
- Sauté the cinnamon in half of the oil.
- Infuse the violets in the other half of the oil over low heat.
- Strain this.
- Mix the cinnamon oil with the violet oil and let cool thoroughly.
- Then add the blood orange purée and crème fraîche and whisk with the vinegar into a dressing.
