Dressing of violets

Taste the flowers on the plate with this violet dressing.

Ingredients

3Crème fraîche
75mlWhite wine vinegar
3gdried violets
250mlOlive oil
1gCinnamon powder
50gblood orange purée

Preparation

  1. Sauté the cinnamon in half of the oil.
  2. Infuse the violets in the other half of the oil over low heat.
  3. Strain this.
  4. Mix the cinnamon oil with the violet oil and let cool thoroughly.
  5. Then add the blood orange purée and crème fraîche and whisk with the vinegar into a dressing.
