Espuma of roasted bell pepper

This airy espuma of roasted bell pepper gives dishes a refined touch. Delicious with lukewarm lamb fillet and baba ganoush.

Ingredients

Pro espuma
Roasted bell pepper

Preparation

  1. Puree the roasted pepper (including liquid) into a smooth mass and strain it.
  2. Add 30 grams of pro espuma per 300 grams and mix with a hand blender, season with salt and pepper.
  3. Put this in a siphon and charge with two gas cartridges. Store chilled.
