Preparation
- Puree the roasted pepper (including liquid) into a smooth mass and strain it.
- Add 30 grams of pro espuma per 300 grams and mix with a hand blender, season with salt and pepper.
- Put this in a siphon and charge with two gas cartridges. Store chilled.
