Preparation
- Heat the absinthe.
- Let it reduce slightly until some of the alcohol has evaporated and add the pre-soaked gelatin.
- Pour into the bottom of the cocktail glasses and let it set.
- Melt the panna cotta and mix with the Marc de Champagne.
- Alternate layers of panna cotta and absinthe jelly.
- Garnish with strawberries.
