Preparation
- Mix the Cachaça with the crème anglaise and pour into a half-liter siphon.
- Charge with one gas cartridge.
- Heat the sugar water to 60°C and add bananas and the juice and grated zest of two limes.
- Fill the glasses with the banana compote and reserve in the refrigerator.
- Slice a lime into thin slices using the slicer.
- Dip the slices in the sugar water and dry the chips in the oven at a temperature of 70°C. Pipe the mousse of crème anglaise and Cachaça on top of the compote.
- Finish with a dollop of whipped cream, lime chips, and a rim of Muscovado sugar with lime zest.
