Frittata with wild mushrooms and cheese

Frittata with wild mushrooms and cheese is rich and savory in flavor, ideal for brunch or dinner.

For 12 tartlets, without dough.

Ingredients

50gGrated Parmesan cheese
500mlcream 20%
enoki mushrooms
Ricotta
forest mushroom cheese
12units.itemsEggs

Preparation

  1. Whisk the eggs with the cream and Parmesan cheese using a whisk.
  2. Season with salt and pepper.
  3. Spoon the mixture into greased ramekins (fill 3/4 full).
  4. Spoon a tablespoon of ricotta and a few cubes (finely chopped) of wild mushroom cheese onto each ramekin.
  5. Distribute this well.
  6. Bake in the oven at 160ºC for about 30 minutes.
  7. Grate some more Parmesan cheese on top and insert some fried enoki mushrooms.
  8. Serve immediately.
