Ingredients

Vacuum bag
pineapple (not too ripe) diced
Malibu
Grated coconut
Lime
Lemon
sorbet ice cream

Preparation

1. Place the pineapple cubes in a vacuum bag, making sure they are neatly arranged next to each other.

2. Add a splash of Malibu and vacuum seal.

3. Let the pineapple cubes 'infuse' for several hours.

4. Place the pineapple cubes on a plate and sprinkle some grated coconut over them.

5. Grate some lemon and lime zest over the pineapple cubes.

6. Serve them with some sorbet ice cream.
