Preparation
- For the marinade, mix the olive oil with the smoked curry, garlic, lemon juice, salt, and pepper in a bowl to form a smooth, aromatic paste.
- Rub the fish fillets well on both sides with the marinade.
- Cover and let rest in the refrigerator for 30 minutes to 1 hour, so the flavors infuse the fish.
- Preheat the barbecue or grill to medium heat. No barbecue? Use a grill pan on the stove.
- Place the fish on the hot grill and cook for 3 to 4 minutes per side, depending on thickness.
- The fish is done when it is lightly browned on the outside and flakes easily with a fork.
- Serving tip: serve warm with lemon wedges and optionally some fresh coriander. Delicious with basmati rice, roasted vegetables, or a fresh salad of your choice.
