Grilled eryngii with mushroom mayonnaise

Eryngii: the ideal grilling mushroom. In the special mushroom mayonnaise, the eryngii truly comes into its own.

Ingredients

2White wine vinegar
2mild mustard
6Sunflower
40gdried mushrooms
fresh eryngii
8Egg yolks

Preparation

  1. Slice the eryngii and score with a small knife, then fry in oil and season with salt afterwards.
  2. Mix vinegar, mustard, and egg yolks well. While blending with a hand blender or blender, slowly add the oil, and season with salt if desired.
  3. Grind the dried mushrooms into a powder using a small grinder and mix into the mayonnaise.
