Gnocchi Carbonara

Sambal
6Egg yolks
180gGuanciale
500gMashed potatoes
200gPecorino (grated)
Bacon crumble
150g00 flour
Preparation
- Mix the mashed potatoes with the flour to form a smooth batter and let it rest for a while.
- Render the guanciale with the garlic and sambal to taste.
- Grate the pecorino.
- Mix the egg yolks with the grated pecorino and the cooked bacon.
- Blend until smooth and fill a piping bag with the mixture.
- Generously dust the work surface with flour and roll out the dough to the desired thickness.
- Cut out the desired shape, pipe some filling on, and fold closed.
- Fry the balls for a maximum of 3 minutes, depending on thickness.
- Tip: the gnocchi freeze well. Dust them with some flour beforehand to prevent sticking.
- Serve with bacon crumble.
