Crispy potato spaghetti

Crispy potato spaghetti with kimchi mayonnaise, smoked paprika powder, and fresh rocket cress.

Ingredients

arugula cress
500gPotato
Pepper and salt
Smoked paprika powder
kimchi mayonnaise
Batter mix

Preparation

  1. Cut the potato into thin strands using a spaghetti cutter.
  2. Vacuum pack the strands tightly so they are well compressed.
  3. Steam the potatoes for about 40 minutes and then let them cool completely, preferably overnight.
  4. Cut into the desired shape and lightly dust with batter mix.
  5. Fry for about 4 minutes at 180°C.
  6. Serve with smoked paprika powder, rocket cress, and kimchi mayonnaise.
