Batter mix
Preparation
- Cut the potato into thin strands using a spaghetti cutter.
- Vacuum pack the strands tightly so they are well compressed.
- Steam the potatoes for about 40 minutes and then let them cool completely, preferably overnight.
- Cut into the desired shape and lightly dust with batter mix.
- Fry for about 4 minutes at 180°C.
- Serve with smoked paprika powder, rocket cress, and kimchi mayonnaise.
