Granita of iceberg lettuce

Ice-cold iceberg lettuce!

Ingredients

Lemon juice
2Gelatin sheets
500gIceberg lettuce
Tarragon
1Japanese rice vinegar

Preparation

  1. Finely slice 100 grams of iceberg lettuce.
  2. Blend the remaining 400 grams of iceberg lettuce.
  3. Mix both and add a little lemon juice.
  4. Dissolve 2 sheets of gelatin in this mixture and finally add some finely chopped tarragon and a tablespoon of rice vinegar.
  5. Freeze and occasionally mash well together until the desired granita texture is achieved.
