
Green Grønn juice
A refreshing mix of cucumber, spinach, Pink Lady apples, celery, and a hint of ginger. 4Pink Lady apples
1Cucumber
1Fennel
4Celery stalks
30gGinger
250gSpinach
30gMint
20gBasil
2Limes (juice and zest)
Pinch of salt
Thai oil
260mlApple juice
50mlSugar syrup
2soaked gelatin sheets
Pinch of salt
50mlEgg white
Preparation
- Quarter the Pink Lady apples and the fennel.
- Start making the green juice by juicing all the vegetables and herbs.
- Finish the juice mix with lime zest and a dash of Thai oil.
- Store chilled until use.
- Heat the sugar syrup in a pan and add the soaked gelatin sheets.
- Mix in the remaining ingredients and pour the mixture into a siphon bottle.
- Attach 2 gas cartridges to the siphon and shake the mixture well.
- Let the foam cool before using.
- Serve the Green Grønn juice with a topping of the apple foam for a refreshing and tasty experience!
