Thai mayonnaise

A creamy mayonnaise enriched with lime juice, mustard, fish sauce, and Thai oil. Ideal as a dip or dressing with a spicy twist!The green oils from Grønn are oils made just as the chefs at HANOS would make them in the kitchen. Intense in flavor and deep green in color. You can find these Grønn oils in our vegetable department. Perfect, for example, for seasoning 'split dressings'.

Ingredients

4Eggs
1Lime juice
50gMustard
30gSushi vinegar
3gSalt
500gThai oil
20gFish sauce

Preparation

  1. Place the eggs, mustard, sushi vinegar, lime juice, fish sauce, and salt in a blender.
  2. Blend all ingredients in the blender until smooth.
  3. Gradually add the Thai oil while the blender is running, until the mayonnaise thickens and all the oil is incorporated.
  4. Taste the mayonnaise and add extra salt to taste if needed.
  5. Store the Thai mayonnaise in an airtight container in the refrigerator until use.
