Green quinoa with creamy egg yolk

Quinoa comes in many different colors and textures, so you can vary it a lot. In this recipe, we use a quinoa mix.

Ingredients

50gsugar snaps
200gquinoa mix
50gGreen peas
50gharicots verts
1Spring onion
50grunner beans
sesame dressing
Salt
4Eggs

Preparation

  1. Cook the quinoa according to the instructions.
  2. Blanch the vegetables until al dente in salted water.
  3. Cut the spring onion into thin rings.
  4. Cook the eggs sous-vide at 64°C for 75 minutes.
  5. Mix the quinoa with the vegetables and sliced spring onion. Season with the dressing. Place in a small preserving jar.
  6. Remove the egg yolk from the egg, halve it, and place on the salad.
  7. Serve immediately.
