
Green quinoa with creamy egg yolk
Quinoa comes in many different colors and textures, so you can vary it a lot. In this recipe, we use a quinoa mix.Ingredients

200gquinoa mix
50gGreen peas
50gharicots verts
1Spring onion
50grunner beans
sesame dressing
Salt
4Eggs
Preparation
- Cook the quinoa according to the instructions.
- Blanch the vegetables until al dente in salted water.
- Cut the spring onion into thin rings.
- Cook the eggs sous-vide at 64°C for 75 minutes.
- Mix the quinoa with the vegetables and sliced spring onion. Season with the dressing. Place in a small preserving jar.
- Remove the egg yolk from the egg, halve it, and place on the salad.
- Serve immediately.
